My resolution to eat/drink something green everyday should be pretty easy to keep this week. I have two HUGE bags of pre-washed kale in the refrigerator from the recent Publix BOGO sale. So far I had only used it in my Zuppa Toscana soup and then the Hubs used it yesterday in his favorite Turkey Kale soup (a modified Giada recipe). Those 2 recipes barely made a dent in one bag. How in the world will I use it all!?
Well, I made kale chips…finally. As much as I like trying new recipes, I’m embarrassed to say this was my first time making these since they became popular FOREVER ago.
I just put a few cups in a bowl and massaged them with the smallest amount of olive oil to coat them, then spread them out on a parchment paper lined baking sheet. I baked them in a 350 degree oven for 10 minutes and they were done! Too easy. The hard part was finding the right seasoning to use afterward. S&P didn’t quite cut it for me so I added garlic powder (aaaaand then maybe I added bacon salt). It was definitely a new weird texture to eat, but I’d do it again. I put it in a bowl and sat in front of the TV eating it like popcorn. I really need to remember this for a healthier movie night!
